NUTRIENT SPOTLIGHT:

BONE BROTH

January 23rd, 2023 | By Tisha Riman

The Story of Impact Kitchen’s Broth

If you haven’t heard the story of how Impact Kitchen became synonymous with bone broth, it all started with an article about Kobe Bryant where he attributed drinking a daily cup of bone broth to his speedy recovery after tearing his Achilles tendon. Like any health enthusiast, this article grabbed the attention of Impact Kitchen’s co-founder, Josh Broun, who suddenly wanted to learn more about the benefits of drinking bone broth. When he brought it up to co-founder Frank Toskan, Toskan laughed in disbelief: “How could this be a trend? My mother has been making this all my life!”. Five locations later, you can grab chicken or beef broth at Impact Kitchen as a hot sipping broth, or in a 32oz to take home and cook with.

But what is it about bone broth that is so special? It has everything to do with the cooking process that makes this broth such a nutrition powerhouse.

How It’s Made

Impact bone broths are simmered for up to 24 hours to encourage the release of health-supportive key nutrients, like collagen, glycine and glutamine.

Our chicken bone broth is made fresh daily with ingredients like antibiotic-free chicken bones, garlic, ginger, carrots, celery, and apple cider vinegar. The beef bone broth is made using grass-fed beef bones, onions, celery, carrots, tomato paste, thyme and bay leaves.

Both are delicious and make great bases for any soups or stews, both at Impact and at home.

Health Benefits of Bone Broth

Not only does simmering these bones for longer add more depth of flavour, but it also makes the nutrient-dense components of the bones more available. Bones are rich in minerals, like calcium, magnesium and potassium, and they also happen to be a good source of collagen, amino acids and glucosamine.

Some of the most significant benefits of bone broth include the following:

Digestive Health

Gelatin, the cooked form of collagen, may help protect the digestive tract. Gelatin also contains an amino acid, glutamine, that can help maintain the integrity of the intestinal wall, and protect against intestinal hyperpermeability, otherwise known as “leaky gut”.

Not to mention, some of the amino acids in bone broth, like glycine and arginine, have strong anti-inflammatory properties, which may be particularly helpful with gut health issues involving inflammation.

Joint Health

A great reason to consume bone broth is that it allows you to get more of the amino acids and nutrients found in connective tissues, that might otherwise be lacking in our Western diets that focus primarily on muscle meats. For example, the amino acid glycine—mostly found in connective tissues—is also used by the body to help build our connective tissues (think tendons, ligaments, cartilage, skin, etc.).

Bones contain both glucosamine and chondroitin, which have been found to help support joint health and may protect against osteoarthritis.

Skin Health

Of course, when we think of bone broth, we often think of collagen and the skin. Bone broth is a good source of collagen, and there is research to show that consuming collagen can help with skin elasticity and skin hydration—both of which tend to decrease with age. Not only does consuming broth give you collagen, but, once digested, it also gives you an amino acid pool from which to build collagen!

Bone broth also contains important nutrients for the skin, including minerals like calcium, magnesium and potassium.
